As summer seems so determined to stay on for a while longer, here’s a cool way to help you take the heat off any stress, any time of the day!
A luscious, delicious honey ice-cream!
2 vanilla pods
2 cups heavy cream
1 cup whole milk
1/2 cup Buzz Honey (Orange)
1 tsp of xantan gum if you do not have an ice cream maker
Crushed Buzz honeycomb pieces to use as topping
1 Cut the vanilla pods, scrape the seeds out, and add to a pot with honey, cream and milk.
2 Heat carefully, stirring constantly until it starts to boil. Cover and leave it to cool before transferring to the fridge to become completely cold.
3 Once cold, sift the mixture to remove the vanilla pods and pour into ice-cream maker. (If you don’t have one, pour into a cooled tin and place in the freezer. Remove after an hour, give it a good blend, and again after four hours to blend again.)
4 Serve with a topping of honeycomb to give it a real ‘buzz’!
